BROCCOLI BEER CHEESE SOUP

Yield: 6 (1 1/3-cup) servings

16 ounces (4 cups) LAND O LAKES® Deli American Cheese, shredded
3 cups LAND O LAKES™ Fat Free Half & Half, reserve 1/4 cup
1 (12-ounce) can beer
1/4 teaspoon coarse ground pepper
1/8 teaspoon garlic powder
3 tablespoons cornstarch
2 (9-ounce) packages frozen cut broccoli, thawed

Combine all ingredients except 1/4 cup reserved fat free half & half, cornstarch and broccoli in 4-quart saucepan. Cook over medium heat, stirring occasionally, until cheese is completely melted (14 to 18 minutes).

Stir together reserved 1/4 cup fat free half & half and cornstarch in small bowl; stir into hot soup. Continue cooking, stirring occasionally, until soup just comes to a boil (3 to 4 minutes). Stir in broccoli. Continue cooking until heated through (2 to 3 minutes).

What an interesting soup! Does it have a beer taste to it? I like broccoli soup but never tried it this way before...Hmm, might have to suck up some courage to make this one! :lol:
